Discover what gives a wafer the perfect snap, a crisp the perfect crunch, and the surprising similarities between steel and chocolate in this discussion with mechanical food engineer Idris Mohammed from Imperial College London.

When Idris Mohammed came from Trinidad to Imperial College London for his undergraduate in mechanical engineering, he had no idea that it would lead him to the study of confectionery. From examining the structure of chocolate wafers to putting crisps in a CT scanner, Idris has worked on some unconventional projects!

Now a teaching fellow, he is taking his knowledge of food and using it to teach his students engineering principles, like chocolate cooking classes to demonstrate the properties of steel.
